Kahlúa Coffee Madness

KAHLÚA COFFEE MADNESS SCALLOP POPS   

Ingredients:

12 Scallops, cut in half 24 slices of pre-cooked bacon Salt / Pepper / Olive oil 1/2 Jar KC Madness BBQ Sauce

Directions:

*Preheat oven to broil* - If using wooden skewers, soak in water for 20 minutes 1) Make sure to remove that pesky side muscle off the scallop. Just google how to clean scallops. Trust me! 2) Slice Scallops in half and gently wrap in bacon and secure with skewers. 4-5 scallops to a skewer. 3) Place scallops onto a foil lined baking sheet and drizzle with olive oil and season with salt and pepper. 4) Cook them under the broiler (watching them) 5) Drizzle with KC Madness and broil for 2 more minutes Eat and Enjoy!!

KCM MEATLOAF   

Ingredients:

1 large Sweet Onion 1 tablespoon Butter Salt Pepper 1 1/2 pounds Ground Turkey/Beef 1 Egg, whisked 1/4 cup + 4 tablespoons NJS Kahlua Coffee Madness BBQ Sauce (divided) More if you like it saucy 1/4 cup Bread Crumbs, I use gluten free Salt Pepper 4 ounces Cheddar Cheese, cut into 1/4 inch cubes

Directions:

Preheat the oven to 425 degrees 1. Over medium heat, melt the butter in a large skillet. Cut the onion into thin slices and add the onions to the pan. Sprinkle the onions with salt and pepper and stir. Cook the onions, stirring every couple of minutes, until the onions are caramelized. Turn the heat down if you notice the onions are burning. Once caramelized, set the onions aside to slightly cool. 2. In a large bowl combine the ground beef, egg, 4 tablespoons BBQ sauce, bread crumbs, cheese cubes, caramelized onions, and a dash of salt and pepper. Mix together just until combined. No over mixing… unless you want a tough loaf! 3. Divide the mixture into 4 equal-sized portions and form them into mini-meatloaves.**** Place each one on the foil lined baking sheet. Spread 1-2 tablespoons of BBQ sauce over the top of each loaf and then bake for 20 minutes, or until no longer pink the center.

Helpful Notes:

**** Sometimes I make one big one or two medium sized ones… What ever floats your boat just adjust time.. Large Loaf = 25-35 minutes Medium loaf = 20- 25 minutes always check for doneness!!

KAHLUA COFFEE MADNESS PORK CHOPS  

Ingredients:

2-4 tbsp Missing Link Rub NJS Kahlua Coffee Madness 2-4 Bone in Pork Chops

Directions:

~Oil grill grates and or preheat oven to 300 degrees for indirect heat (grill) placing coals on one side~ 1) Season pork chops evenly on both sides with Missing Link Spice rub 2) If using Grill ~ Place pork chop on grilloppisite coals and grill for 8 ½ minutes each side then brush both sides of chops with NJS Kahlua Coffee Madness and move chops to grates directly over coals for an additional 30 seconds on each side to achieve a nice char 3) If using Oven ~ Brown pork chops in a hot skillet on each side for 1-2 minutes and then place in oven for 30 mins 4) Check chops for doneness ~ when a meat thermometer reaches 145 degrees

KAHLUA STEAK TIPS  

Ingredients:

2-3 lbs Sirloin steak tips NJS Missing link spice rub 8 oz NJS Kahlua Coffee Madness

Directions:

~ Preheat grill to medium high using indirect heat ~ 1) Season steak evenly with the Missing Link spice rub and then marinate steak tips in the Kahlua Coffee Madness for about minutes- using about half the jar and reserving some for drizzling when done 2) Place on grill away from coals and grill for 6 minutes then flip and rotate steak 3) Continue cooking another 5-8 minutes or until desired temperature and remove from heat and drizzle with more sauce
